I hope you all had/are having an amazing Holiday Season!! I hope you got to spend a lot of time with family and friends, had fun and enjoyed it 🙂 Today’s post is all about Gingerbread Cupcakes!!
Gingerbread Cupcakes Ingredients:
1/2 cup light brown sugar
1/2 cup unsalted butter (room temperature)
1 egg (room temperature)
1/2 cup milk (room temperature)
1/2 cup molasses (European kind)
1 teaspoon vanilla extract
1 1/3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1) Preheat the oven to 180°C / 350°F or GAS 4
2) Mix the butter and sugar in a kitchen machine until the texture is fluffy
3) Add the egg and mix
4) Then add the milk, molasses and vanilla extract. Beat until everything is mixed together
5) Now add the flour, baking powder, baking soda, salt, ground cinnamon, ground ginger, ground nutmeg and ground allspice. Mix well and make sure everything is combined!
6) Line a cupcake tray with paper cups and fill in the mixture so the cups are about 3/4 filled. This batch usually gives me around 12 cupcakes.
7) Put it into the oven and bake for about 20 minutes or until a skewer comes out clean. They should look like this 🙂
Cream Cheese Frosting Ingredients:
8oz full-fat cream cheese (room temperature)
1/4 cup unsalted butter (room temperature)
2 cups confectioners’ sugar
1 tablespoon milk (I used normal cow-milk 🙂 )
1 teaspoon vanilla extract
1) Measure the cream cheese and butter. Cut them into small squares, this should make the mixing process shorter!
2) Add the sugar, milk and vanilla extract. Beat until everything is very well combined!
3) I would put the frosting in a cold place (refrigerator) for at least a half an hour to make it thicker. When the cupcakes are completely cold and the frosting is not so runny anymore, add it with a piping bag or with a knife.
4) I got my adorable little gingerbread men from Bulk Barn, but I’m sure you can find something similar in a lot of places!
