Happy Friday!
Are you guys ready for a delicious recipe? A Coconut Cupcake recipe to be more exact? Now, don’t take my word for it that they are delicious. Try them out yourself! I feel like the coconut sprinkles on top look like snow, don’t you agree?
Alright, let’s get started with these Coconut Cupcakes:
Cupcake Ingredients:
200 gram butter (soft)
200 gram sugar
1 teaspoon vanilla extract
3 eggs
70 gram all-purpose flour
1 teaspoon baking powder
a pinch of salt
150 gram desiccated coconut
70 gram ground almonds
1) Preheat the oven to 180°C / 350°F or GAS 4
2) Put the butter, sugar and vanilla extract into a kitchen machine and mix until the batter is light and fluffy
3) Then add one egg at a time. Make sure to mix between each egg!
4) Now add the flour, baking powder and salt. Mix until everything is well incorporated.
5) It’s time to add the coconut and almonds 🙂 And again, mix until everything is mixed together and the batter is fluffy
6) You are now done with the batter for the coconut cupcakes! Line a cupcake tray with paper cups and fill in the mixture so the cups are about 3/4 filled. This batch usually gives me around 12-15 cupcakes.
7) Put them into the oven and bake them for about 20 minutes or until a skewer comes out clean. They should look like this:
Mascarpone Frosting Ingredients:
240 ml double/heavy cream
240 gram mascarpone
200 gram icing/confectioners’ sugar
1) Mix the double/heavy cream until it’s fluffy. Make sure you don’t mix it for to long because if you do it will result in you making butter 🙂 One way to make sure it was mixed enough is when you take the mixer out of the cream. It should leave behind “pikes” of cream that hold their form. (<- sorry for this weird explanation but I don’t know how else to describe it…)
2) In another bowl mix the mascarpone and sugar together.
3) Now take the cream and softly and slowly mix it under the mascarpone and sugar batter. Be sure to really be gentle with this, if you mix it in to fast the fluffiness of the cream will get lost. You should end up with an extremely fluffy frosting that is not too sweet.
4) As soon as the cupcakes are completely cooled down spread the frosting onto the cupcakes with a knife. Then dip the top part of your cupcake into a bowl of coconut flakes.
5) You could leave your coconut cupcakes like this or you obviously can add whatever kind of decoration you would like. I decided to add adorable sugar cows to mine. Now it looks like the cows are standing in snow 🙂 And I love how they turned out!

I realized how many times I wrote “fluffy” in this recipe but I really don’t know another word to describe this consistency any better! Sorry 🙂
