Today’s post is a sweet one; it’s all about the Banana Chocolate Chip Cupcakes! And yes you read right! I really wrote Banana Chocolate Chip CUPCAKE!! You know, that cute little thing with the delicious buttercream or frostingĀ on top? Yep, that’s the one!! I searched the web for a while but couldn’t find one recipe for a cupcake – not ONE.
As you may know I’m slightly obsessed with cupcakes so I was not too happy to only find muffin recipes. After thinking about it for a while I decided to just create the frosting all by my self, and that’s exactly what I did :))
Ā Banana Chocolate Chip Cupcakes Ingredients:
1 cup mashed (ripe) bananas (ca.2 bananas)
1 egg
1 teaspoon vanilla extract
1/2 cup unsalted butter
1/4 cup milk
1 1/2 cups flour
2/3 cup sugar
1 1/2 teaspoon salt
3/4 cup chocolate chips (I usually use a bit more ;))
1)Ā Preheat the oven to 180Ā°C / 350Ā°F or GAS 4
2) Put the mashed bananas, egg, vanilla extract, butter and milk into a kitchen machine and beat until everything is mixed together
3) Then add the flour, sugar and salt and mix until everything is mixed together
4) Now take the chocolate chips and add them to the mixture,
make sure that the chips are spread out as evenly as possible
5) Line a cupcake tray with paperĀ cups and fill in the mixture so the cups areĀ about 3/4 filled. This batch usually gives me around 12 to 14 cupcakes
6) Put it into the oven and bake for about 20-25 minutes or until a skewer comes out clean. Just remember that if you poke into the cupcakes to test them you might “stab” a chocolate chip. In that case take a new skewer and try again š
Banana Buttercream:
120 gram unsalted butter
3 2/3 cups confectioners’ sugar
1 tablespoon milk
1/2 a banana (smashed)
1) Put the butter in the kitchen machine and mix until it’s fluffy
2) Add the confectioners’ sugar, milk and banana.
Keep mixing until the batter is even and smooth
3) As soon as the cupcakes are cold you can start putting the buttercream on top. Just put the mixture into a piping bag and start by the outside of a cupcake and work your way towards the middle in circular motion
4) Now you can add pretty much what ever your little heart desires.
I added some silver sugar balls to some of mine, the rest I left without any decorations.
They should look somewhat like this:
